Christmas Desserts and Food #5

S'mores Hot Chocolate

Feeling cold? Try a s'mores hot chocolate, sweet and delicious!

Ingredients:

1. 2 cups milk, any kind
2. 1 cup water (or use 3 c milk)
3.¼ cup cocoa powder
4. 2 Tbsp light chocolate syrup
5. 2 Tbsp sugar
6.1/4 tsp non-bitter stevia (or add 1-2 Tbsp more sugar to taste)
7.pinch salt
8.graham crackers, crushed (for lining rim)
9.½ cup marshmallows
Instructions
  1. Preheat oven to low broil and move oven rack to the second from the top (high enough up to broil your marshmallows). Place baking sheet on rack.
  2. Heat milk and water in a saucepan over medium heat until warmed through - about 5 minutes. Be careful not to overheat or scald.
  3. Add cocoa powder, chocolate syrup, sugar, stevia and salt and whisk vigorously until thoroughly combined.
  4. Meanwhile, take a few marshmallows and rub them around the top of your mugs so the graham crackers will stick. Then, dip mug in graham cracker crumbs until well lined. You could also add some graham cracker crumbs to the bottom of your mug for extra graham flavor.
  5. Pour in hot chocolate and top with ¼ cup marshmallows each. Carefully set mugs on the baking sheet in the oven and broil marshmallows until browned, watching carefully as to not let them burn.
  6. Carefully remove from the oven with a towel and serve with holders or a small towel to protect hand from heat (they should cool quickly for handling). Top with a drizzle of chocolate syrup and extra graham cracker crumbs for serving (optional).

Easy!Take a sip as it runs down your throat!

Christmas Desserts and Food #4

Turtles

Now before you all go screaming that I eat turtles, this is not a fried or steamed turtle recipe! It's a non-real turtle recipe, ok? Look at the picture!

Ingredients:

1. 8 ounces pecan halves (I used roasted, lightly salted)
2. 25 caramel squares, unwrapped (about 1 heaping cup)
3. 1/4 cup cream or half-and-half, divided
about 16 ounces roughly chopped chocolate, melted (I used 8 ounces dark and 8 ounces milk, both Trader Joe's Pound Plus bars)
4. sea salt, optional for sprinkling

Recipe:

  1. Line two baking sheets or large platters with parchment paper. It's helpful if they will fit in either fridge or freezer.
  2. Make small piles of pecans, using 5 to 6 pieces per pile. Overlap the pecans some to reduce gaps so the caramel doesn't seep through.
  3. In a medium microwave-safe bowl, add the caramels, half of the cream (reserve the remainder), and heat on high power to melt. It will probably take about 3 to 4 minutes total, but you must stop and stir the mixture every 30 seconds so you don't burn it. The first few times, stirring is almost futile but eventually the caramels soften enough to be stirred smooth. Take your time, don't overheat or heat too quickly, and keep stirring; it will come together. If the mixture seems thick and needs more cream, add the remaining amount. I used 1/4 cup total and have made the recipe with both Kraft brand caramels and Werther's Baking Caramels, but caramels vary and you may need less cream than I did. The caramel is runny and loose when it first comes together, but firms up quite a bit as it cools. Alternatively, you can melt caramels on the stove over low heat, using caution and stirring frequently.
  4. Add about 1 tablespoon caramel to the top of each pecan pile; set aside.
  5. In a medium microwave-safe bowl, add 8 ounces chocolate and heat to melt, about 1 minute on high power. Heat in 15-second increments until chocolate can be stirred smooth. I prefer working in smaller batches with chocolate and recommend doing the same and not heating all 16 ounces at once; melt additional chocolate as necessary.
  6. Add about 2 tablespoons chocolate to the top of each pecan cluster by dolloping it on top and letting it fall down the sides.
  7. Optionally add a pinch of sea salt to each Turtle.
  8. Allow Turtles to firm up at room temp (will take many hours) or in the fridge or freezer (about 15 minutes) before serving. Turtles will keep airtight at room temperature for weeks, or in the fridge or freezer for many months.

Scrumptious!

    Apple Crisp or Apple Crumble

This is a recipe from England, Apple Crumble!!! One of my favourite dishes to cook.

The recipe is as simple as 123. And that's better, there are only 4 ingredients you need.

    Ingredients:

    1. 4 Green / Red apples

    2. 150g of brown sugar

    3. 220g of flour

    4. 4 medium slices of room temperature Butter ( unsalted )

    5. Optional Vanilla ice-cream

    Steps:

    1. Chop the green apples into small quarters, then take a big pan and add 70g of sugar and a touch of water ( if not enough add 30g each time ). Then add the apples, stir the apples with the melted sugar to caramelise it .
    2. Close the pan with a lid and every 1 minute stir.
    3. When your apples are done leave them aside.
    4. Preheat your oven to 190 degrees celsius for 20 minutes
    5. Take your flour, remaining sugar ( add more if needed following the 30g adding rule ) and butter ( follow the 2 slices adding rule but instead, butter !) and place into a bowl.
    6. Mix the flour, butter and sugar with your hands!
They should become into a bit of tiny dough, this is the crumble. Place the apples into an oven-proof dish.
    7. Sprinkle the crumble over the apples and place in oven until it gets golden brown.
    8. Best served with ice-cream. Enjoy!!!

    How easy is that? Mmmmm..........

Hi, I'm Julien and a big warm welcome to my blog!
